PHILIPPE COUSTEAU (1973) - after visiting Australia


Cousteau told us and demonstrated how to prepare sea urchin roe for presentation.  Popular and expensive in France at the time, unknown in Australian gourmet restaurants.  (The ideal urchin is a smaller brown variety.
